Ready Set Juice



Ready, Set, Juice!


Once you've selected your produce, it's important to use it as quickly as possible. The following guidelines are suggested by Cherie Calbom, M.S., a certified nutritionist in Kirkland, Washington, and co-author of Juicing for Life.

* Scrub produce thoroughly with a vegetable brush before juicing. Soak nonorganic produce in a sinkful of tepid water with a drop of pure castile soap, available in most health food stores, adds Stephen Blauer, former director of the Hippocrates Health Institute, a naturopathic clinic in Boston, and author of The Juicing Book. (A drop of dishwashing liquid also does the job.)

* If a fruit or vegetable has been waxed, be sure to peel it before juicing. While the wax itself won't hurt you, it makes it virtually impossible to remove pesticide residues from the skin.

* Remove all seeds and pits. When you're not using a juicer made specifically for citrus fruits, be sure to peel them before juicing. The skins of oranges and grapefruits contain a toxic oil that's an active ingredient in some household cleaners, according to Calbom. Leave as much of the white, pithy part as possible, though, since it's loaded with vitamin C and flavonoids.

* Cut fruits and vegetables into small-enough pieces to fit easily through your juicer. Cut off and discard any parts that look bruised or damaged; they don't add any nutritional value and may affect the taste of your juice.

* Wash and juice any stems or greens that are still attached to the fruit or vegetable. Many, such as beet greens, are rich in valuable minerals. Two exceptions are carrot and rhubarb greens, which can be toxic.

* Certain fruits, such as bananas and avocados, contain very little water and can't be juiced. If you'd like to include them in a juice recipe, juice all the other, moister produce first, transfer the juice to a blender and process with the (peeled) banana or avocado.

* Imported fruits and vegetables should be avoided when possible because they contain more harmful pesticide residue than domestic produce. But if you must use it, be sure to peel it before juicing.

* For maximum benefit, serve juice immediately. Juices stored in the refrigerator lose their nutritional value very quickly.
